Eat More Fat and Lose Weight

I am re-reading a great book by Mary Enig called Eat Fat, Lose Fat. I have read it before, and I am amazed every time by the testimonials in this book. There are thousands of people who have decided to stop listening to modern medicine and start eating more saturated fats. They are healthier, happier and thinner as a result! Here are a few quotes from the book:

A new study by Temple University School of Medicine took place in a clinical research center where every calorie eaten and spent was measured. After a week of typical eating, ten obese patients with type-2 diabetes followed a diet that limited carbohydrates to 20 grams per day but allowed unlimited protein and fat. With carbs out of the diet, the patients spontaneously reduced their daily energy consumption by 1,000 calories per day.
When carbohydrates were restricted, said lead researcher Guenther Boden, MD, the subjects spontaneously reduced their caloric intake to a level appropriate for their height, did not compensate by eating more protein or fat, and lost weight. We concluded that excessive overeating had been fueled by carbohydrates.
In addition to calorie reduction and weight loss, subjects experienced markedly improved glucose levels and insulin sensitivity as well as lower triglycerides and cholesterol (Ann Intern Med. 2005 Mar 15;142(6):403-11). The interesting thing about this study was that the subjects did not consciously try to restrict calories or lose weight, showing that restricting carbs and increasing fat in the diet works better than will power.

The number one fat for weight loss? Coconut oil!

Eating 2 tablespoons of medium-chain fatty acids (the kind found in coconut oil) with a meal causes body temperature to rise after the meal. This means that coconut oil can boost metabolism, helping you to avoid the slowdown in metabolism that often occurs during dieting.

I personally can attest to the satisfied feeling that you get after eating coconut oil. I have been cooking with it, and eating it raw for a few years now and I have more energy, completely clear skin, and less sugar cravings. My annoying summer hay fever is almost completely gone, and I haven’t been sick in years. My daily diet is around 3,000 calories with a minimum of 65% of those calories coming from saturated fat. I eat butter, lard, beef tallow, coconut oil, chicken fat and whole, raw dairy.

Butter is my favorite food group

I urge you to study this issue for yourself. Study it like your life depends on it! It is really hard to change your opinion about saturated fats. We have been so brainwashed in the last few decades, that it is a very difficult subject to be objective about. Wipe your mind clear of any preconceived notions or ideas that you have about health and give traditional fats a chance. You will be glad that you did!

I too am a firm believer in eating good fats. I have tried a few times to start eating coconut oil, but it makes me really nauseous! I have tried to decrease the amount I take, take it with food, with tea etc…nothing works. It makes no different if it is morning or evening either. Have you experienced this? Thoughts?

Dr Atkins seemed to have it right. My doctor has me on a low carb diet and I eat less, sleep better, have great energy and better moods.
I blog many low carb recipes on my site. http://www.marinatingonline.com. I do blog some carb filled recipes because I am a professional chef and have to make this stuff for my clients but I do not eat it!

I am not into any specific “diet” but I do try to listen to my body. I make sourdough bread, and homemade tortillas, but we don’t go overboard. And we always consume protein with the carbs. I think carbs are just so addictive! Most people eating the Standard American Diet are consuming 700 TIMES the carbs that they should in one day. Yikes.
And I love your recipes by the way, your food always looks too beautiful to eat 🙂

Thank you. I just mention Atkins because everyone seems so down on him but he was the original paleo….I am staying away from carbs due to the fact that I have to bring my system back into balance and after that I will add good ones back in.

So true… we are essentially doing paleo (except we still do diary, esp butter). I’ve lost 20 pounds and my husband has lost 25 pounds. We’ve not lost that much weight… ever… in fact, doing everything that docs have told us to do, we’ve gained about 100 pounds in 10 years. I’m so excited with our success and I have even had enough energy to start exercising every day. (PS- Our nutritionist uses Standard Process supplements to heal those of us coming to her already sick. Adrenal fatigue was my biggest enemy but it’s quickly becoming less and less of an issue as she heals my adrenal glands)

Excellent. I have heard great things about Standard Process. How great to have a nutritionist on board to get your adrenal glands whipped back into shape. I know my energy levels went WAY up when I gave up caffeine.

Great post! I too have read this book and I think it is AMAZING. I have struggled with maintaining a healthy weight and with cravings for most of my teen/adult life. It wasnt until incorporating fats like kefir, raw cheese, and lots of animal products that I have had no fluctuations and been satisfied with my weight. I was raised vegetarian and vegan so you can see why I would have issues. 🙂 Thanks for this!

Great job! You’re right it is hard to get rid of the preconceived notions that we have about fat. I know that I have never felt so healthy, and had such constant energy through out the day…

      Thank you Butter!

[…] I was using a lot of canola oil and vegetable shortening. I replaced both of those with coconut oil. I started frying and baking with it. (read about how coconut oil can help you lose weight here) […]
